This is essential, as some recipes contain ingredients that may pose a higher choking risk—e.g., foods with husks (such as corn), foods with skins (such as peas), stickier foods (such as potatoes), or harder/drier foods (such as seeds, dried herbs, and certain thickening agents).
For all recipes, it is recommended to peel tough vegetables before cooking, remove stalks and dried leaves, and trim fat and gristle before blending to a smooth purƩe. Use a fine-mesh strainer if required and IDDSI testing methods as per lesson 4.
